Spicy Peanut Noodles


Spicy Peanut Noodles

8 ounces spaghetti
2 tablespoons sesame oil
1 teaspoon minced garlic
1 small onion, cut in medium chunks
2 teaspoons minced fresh ginger root (use 1 teaspoon if you don't want it too spicy)
1/2 cup peanut butter
1/4 cup soy sauce
1/2 cup hot water
1 tablespoon vinegar
1 teaspoon white sugar
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon white pepper
2 cups chopped kale
2 carrots sliced
chopped cilantro & more crushed red pepper flakes (optional garnish)

Directions
  • Cook pasta in a large pot of boiling water until done. Drain.
  • Meanwhile, in large pot/pan, saute garlic, white onions, garlic, and ginger with the sesame oil on low/medium heat until the onions are almost translucent. Add the carrots and kale and saute until tender. 
  • While the vegetables are sauteing, mix peanut butter, soy sauce, water, vinegar, sugar, white pepper, and red pepper flakes in a small bowl. Add this to the vegetables.
  • Toss in noodles and serve. Garnish with fresh chopped cilantro and red crushed pepper if desired.
